Mushrooms | Fresh Corn | Snap Peas | Family Style
Great side dish for grilled meats or vegetarian entree
Ingredients
2 pounds Shiitake and Crimini and/or Porcini
1 cup Snap Peas
1 cup Fresh Corn
½ cup EVOO
1 cup Minced Shallot
2 oz Unsalted Butter
2 tablespoons Kosher Salt
1 teaspoons Cracked Pepper
2 tablespoons Chopped Garlic
¼ cup Melted Butter
1 cup Chopped Italian Parsley
Instructions
Brown the butter slightly, shallots at the end and garlic
Add the mushroom mix, your choice
Pan saute funghi til translucent , tender
Add sanp peas, approx 3-5 minutes
And spices and herbs, toss in parsley add salt
